Hotdish = LOVE

Tater Tot Hot dish.
Most know how to make this classic hot dish. For years I have doctored up this hot dish with diced onions and garlic, shredded cheese, what ever you have will do in this dish. Try some frozen corn next time! :)

I've changed up the cream soups as well! Also you can use ground turkey, makes a nice change too! I love making a hot dish, generally you have everything in the pantry! Left overs make awesome hot dishes too! :)

Lasagna Hot Dish.
Hubby had made his famous Lasagna for a pot luck at the office. My son and I created our own version of a Lasagna hot dish with left overs. We had red sauce with Italian sausage and ground beef, ricotta cheese mixture, Penni pasta and some shredded Parmesan cheese. I cooked the pasta to El Dante while the oven warmed up to 350 degrees. In a small baking dish I put in the pasta the the sauce mixing them together, then I put the ricotta cheese mixture over the pasta, then some shredded Parmesan, baked at 350 for 35 minutes until the cheese melts. This hot dish turned out really good! My son and I enjoyed it! :)

Okay, I think I'm hungry now!

1 c. sugar
1 c. peanut butter (I use crunchy)

Grandma Cleo's Peach Pie

Pre made pie crusts unless your making your own...you'll need a bottom crust and a top crust.

Note, Mom has this recipe in her head. She also said that any time grandma made this pie there were never any left overs.

5-6 fresh peaches peeled, sliced,
sprinkle corn starch in bottom of pie crust, lay in sliced peaches covering the bottom, sprinkle brown sugar and white sugar, dot butter, add another layer of peaches repeat sugars and butter dots.
once crust is full sprinkle again with corn starch add some real cream to barely cover peaches add top crust shell, pinch top crust to the bottom all the way around cut off excess, slit the top crust three times for steam to escape.
bake at 400 degree for about 35-40 minutes until brown and bubbly, take out last five minutes, pastry brush a white sugar and cream mixture over the top, back in until golden brown.

Serve warm with ice cream or serve cooled.
